The results are in. I have made the recipe posted by one of
soniag 's LJ friends and either way worked very well. Before I knew the entire recipe, I had purchased pumpkin pie mix and a carrot cake, because I couldn't find a spice cake mix and I didn't realize that the recipe called for canned pumpkin alone. When I discovered that it called for canned pumpkin, not pie filling, I bought that too and a spice cake mix. The intended variation (spice cake and canned pumpkin...you do have to add the water..LOL) I made first. Of course I totally blew the fat and calorie savings by using a cream cheese frosting. It was terrific and I had to cut it up and freeze portions of it lest I eat the entire thing in a matter of days thereby also blowing all the fat and calorie savings. Today, I made the carrot cake and pumpkin pie filling version as a bread and it is also all sorts of pumpkiney spicy goodness. I can't really decide which is better as they both were good.
For those interested all you do is mix the cake mix with the listed amount of water and canned pumpkin and bake. My bake time was a bit longer, especially for the bread version but both end products were moist and tasty. And it is super easy!
